Sometimes I crave the burrito bowls made by C_ _ _ _ _ _ _ _ ( a Mexican food chain not located in Alex) and now by Taco J_ _ _ _. I have come with a similar recipe that I like just as well. I believe that their secret is in the rice and sauce.
I use more nutritious brown rice but basmati rice is closest to the commercial version. Cook the rice according to package directions. While rice is cooking, combine 2 Tbsp olive oil; 1/2 tsp each ground pepper, salt and cumin; 3 Tbsp fresh lime juice and about 1/2 cup finely chopped cilantro. When rice is done, remove the lid and cool for about 10 minutes. Then fluff with a fork while mixing in the above "sauce".
Divide rice among 4 bowls or large flour tortillas. Drain and rinse 1 15 ounce can of black beans and divide among bowls. Per your preference, top with cut strips of romaine lettuce, chopped cilantro, grape tomatoes, quartered, finely chopped red onions, diced avocado, shredded ceso fresco or mozzarella cheese. Serve with salsa, sour cream, tortilla chips and lime wedges.
If you want, you can add diced cooked chicken, pork, beef or sea food!
