EASY SCONES

3 cups SELF RISING FLOUR (MUST use this kind of flour)

3/4 cups lemon/lime soda (7UP or sprite...diet is ok)

3/4 cups heavy cream

Heat oven to 400 degrees. Line a baking sheet with parchment paper.

Place flour in a large bowl and make a well in the center. With a fork, gently stir in the soda and cream, mixing until incorporated. (do not over mix or beat).

Drop 8 large spoonfuls of the dough onto prepared baking sheet. Sprinkle with raw or granulated sugar if desired and bake until golden brown, 18-20 minuted. Serve warm with butter and honey or jam.

I sometimes add frozen raspberries, craisins, raisins or blueberries.

Switch it up to savory: For cheesy chive scones, add 1 cup of shredded sharp cheddar and 2 Tbsp. chopped chives to the flour.
